If you are going to do virtually any science or engineering related degree I would recomend AH Maths. If your going to do a more 'classical' subject go for English.

I personally recommend AH Maths....i found english really really boring at school an decided to take AH Maths as it seemed like a challenge....in fact, it wasnt that challengin, but enjoyable

That's cool that you're going to do AH French and AH German! I thought AH French would involve a lot of hard work for me so I decided to concentrate on other subjects. 
I think the problem with the Higher English course is highlighted when a person such as yourself is potentially going to fail Higher English but is capable of doing AH French and AH German.
Good on you though!

I only want to do 3 subjects next year

However, my school says without any advance highers 4 columns at least need to be filled in. If I have to I'll do AH chemistry but i want a relaxing year with a job to make money for uni!! Can anyone help me to make a strong argument? I really don't know how to put it!

Actually I think my brother did that but he was doing AH Gaidhlig too. The school even put my name down for Crash higher Modern studies which I have no intention of doing and I wouldn't have known about it had I not happened to see the class list!! The thing is once I start something I would have to finish it! I'm that kind of person, I never give up!!
